    • QUICK MANGO KULFI

Summer brings sizzling temperatures and sweet mangoes. And it’s only natural to use this king of fruits to beat the heat, like with this quick and easy mango kulfi.
And in our attempt to #stayhome #staysafe it is better to take care of all our cravings by ourselves and this #yummy #kulfirecipe will just thrill & chill!
Now the traditional kulfi recipe calls for hours of cooking the milk on slow heat to thicken it, but who wants to spend too much time in the kitchen in this heat? 
So we will use a shortcut and still come up with an authentic taste that will appeal to any kulfi or mango lover. The kulfi flavour also comes from cardamoms and for that we will be using cardamom powder.

INGREDIENTS
• 1 packet or cup thick cream
• 1 can condensed milk
• 1 1/2 cups mango pulp
• 1/4 teaspoon cardamom powder
• Chopped almonds for garnishing 
METHOD
Put all the ingredients in a blender or food processor, and blend until smooth. Viola! The kulfi is ready to go into the freezer!
Pour into kulfi or popsicle moulds and freeze overnight for best results. Serve with sliced almonds, pistachios or just plain.
Since I did not have kulfi moulds, I used small-sized paper cups and inserted an ice lolly stick into it and kept it in the freezer. Ideally, an ice cream or kulfi should be frozen in an airtight container to avoid the formation of ice crystals.
You can also just freeze it in a plastic box with a lid if you do not have individual moulds and cut out pieces to serve. .

    • WATERMELON PUNCH
Light, refreshing and super easy! 🍉🍸🍋 This super refreshing drink, full of the natural goodness of watermelon and lime is all you need to quench your thirst at Iftar. *Ingredients*
2 cups watermelon chunks
1/2 cucumber, finely cut
1 tablespoon tukh malanga (Basil seeds)
2 tablespoons lemon juice
1 tablespoon sugar, or to taste
Chopped mint for garnishing *Method*
~ Cut watermelon into chunks and remove the seeds. ~ Soak one tablespoon of tukh malanga in a cup with a little water, for at least 15 minutes.
~ Give the watermelon chunks a quick blend.
Pour it into two glasses. ~ In each glass, add ice cubes, 1 tablespoon lemon juice, about 2 tablespoons of diced cucumber, tukh malanga, a teaspoon of sugar (if you like it very sweet).
~ Garnish with mint and a slice of watermelon and enjoy! ~ This quantity makes two glasses. ‼️ TIP: If you use frozen watermelon chunks, the drink give a delicious slushy texture. .

    • Wishing we all thrive in this testing times by finding more meaning, more love, more peace and more guidance from Allah.
“Being connected in a shallow way to the entire world can prevent us from being deeply connected to those closest to us – including ourselves.” So says Arianna Huffington in her book “Thrive: The Third Metric to Redefining Success and Creating A Life of Well-Being, Wisdom and Wonder.”
It’s a book that claims to provide powerful ideas about how to approach life differently. She wrote the book after collapsing from exhaustion, a result of relentless pursuit for success and excellence as the cofounder, president and editor in chief of the Huffington Post Media Group. 
It’s a book I am glad I have with me to explore in this crazy time when the whole world has come to a halt and we’re all living in a similar situation, though mine is, Alhamdulillah, more comfortable than most - for I have a home, family and a job.
 At the end, there is Archimedes’ quote: “Give me a place to stand and I will move the whole world.” And using this as inspiration, Arianna urges the readers to “Find your place to stand – your place of wisdom, peace and strength. And from that place, remake the world in your own image, according to your own definition of success, so that all of us … can thrive and live our lives with more grace, more joy, more compassion, more gratitude, and yes, more love.”

    • Catching up on reading is the go-to option for most of us homebound people. Luckily, I have a pile of books bought in the last couple of years that I never got around to picking up, mainly because I do not have time to finish a book as fast as I want – once I start a book, meaning fiction, I need to read it as often as I can to get to the end, otherwise all the pleasure is lost for me. 
Now I can make time between working from home, finding solutions to kill boredom for other family members (mainly kids), house duties (since the maids are homebound too) and checking up on friends and family. 
These are some of the books by my bedside to be picked up. 
A Thousand Splendid Suns by Khaled Hosseini was heart wrenching, chronicling the changing fate of Afghans and the misery women face. Then I am done with “When Breath Becomes Air” too, thankfully, otherwise reading a book that deals so much with one’s imminent encounter with death would have been too much to take right now. 
Though I loved it, was moved by it and shed lots of tears, Paul Kalanithi’s amazing autobiography is going back inside the bookshelf.
Reading these days should be about lifting our spirits, reviving our faith and empowering ourselves to deal with this new reality. Which is why I have stopped reading all the stories and reports that bring out the scary facts and figures about COVID-19. Yes, I check out authentic newspaper reports and updates, but I do not open all the forwarded videos and posts in my messages. 
I mean, why are all WhatsApp groups only filled with all kinds of fake remedies, pathetic photos of sufferings and homemade videos of know-it-alls giving us their two cents that’s not even worth two paisas today?
Give me some motivation, some smile, a genuinely funny and not staged-for-video, and messages of love – like the sound of Azan, the wailing baby because all fast-food outlets and deliveries are closed, and the Italians singing from their balconies. 
Sending you all lots of prayers and love, from my home to yours, and hope we all come out of our homes to a safer world outside soon! Ameen.
    • Stay home. Stay healthy. Keep yourself busy with things that please you and thoughts that uplift you. And keep connected to people dear to you.
Reading pleases me, but I haven’t been able to do much of it lately. Here I mean reading for pleasure, because reading & writing are part of my work life. Now I have picked up some books in my bucket list & bookshelf, starting with Red Birds by Mohammed Hanif. It is a satire on the absurdity of war & conflict. 
Much of the story takes place in a refugee camp. I can’t help but draw a parallel with life in a refugee camp and life in a home. Alhamdulillah for us, there is no parallel because what the security and comfort of our homes offer us now is a shield from the enemy – COVID-19! We have access to our most beloved possessions and have the freedom to do whatever we like inside – and for our own good. 
This is a time for reflections – reflections of our priorities, values and blessings. A time for gratitude for our blessings – especially the blessing of having to just stay in our homes for our own good. And also a time to understand what the people of Kashmir, Palestine and Syria are facing – lockdown, curfew, bombardment, atrocities, deprivation of access to health and civic facilities & countless missing loved ones to worry about. 
Though we know this will end eventually, the people there do not. Individually, we can’t do much about them, other than pray, but there is much we can do about our situation. 
We can all maintain social distancing & hygiene, & stay home as much as we can, both for ourselves and others. And while we are at it, let’s lift our spirits through prayers and cheers, with positive messages & frequent calls to people we care about. 
Let’s send jokes and not Coronavirus posts. Let’s post pictures of our working from home lives & family time. Let’s make the most of this time to reconnect with our own selves, family and, most importantly, Almighty Allah.
All hardships are from Allah, as blessings for those who turn to Him with patience & prayer. 
Sending you all lots of prayers & love, from my home to yours, & hope we all come out of our homes into a safer world outside. Ameen
